HUNSRÜCKER ASH-BAKED PORK ROAST
Hunsrücker Aschenbraten is an authentic regional pitmaster tradition from the German Hunsrück region. The Pitmaster builds a roaring wood fire in a deep ground pit until the hole is completely filled with glowing beechwood coals and clean hot ash. A seasoned pork shoulder roast is stuffed with your custom filling, rolled tightly in heavy protective foil, and buried directly into the deep bed of embers & ash. Covered completely under hot coals, it slow-bakes underground for hours until meltingly tender and juicy.

Every Aschenbraten features a customized internal stuffing blend. Clients consult directly with Pitmaster Eric prior to the event to select their custom filling:

HOW TO KEEP YOUR BBQ HOT & JUICY
Follow these pitmaster holding techniques to maintain 100% competition quality if eating hours after delivery or pickup.
1. Home Oven Holding (Best)
Set your kitchen oven to 70°C (160°F). Keep meats tightly wrapped in foil or butcher paper inside a baking tray with a small cup of water at the bottom to maintain humidity. Holds perfectly hot for up to 4 hours without drying out.
2. Insulated Cooler ("Faux Cambro")
Line a standard plastic cooler with clean dry towels. Place foil-wrapped meats inside and cover with another towel before sealing lid tight. The thermal insulation retains internal heat (65°C+) for 4 to 6 hours!
3. Chafing Pans & Sterno Cans
For buffet setups, fill water pans with 1cm hot water and light Sterno cans 20 minutes prior to service. Keep lids closed between servings to preserve steam and prevent brisket or fried chicken skin from cooling down.
ON-SITE CATERING & SETUP SPECS
What to expect when Meat Candy agrees to on-site live-fire cooking or staffing after reviewing your booking request.
We require a flat 3x3m minimum outdoor surface (driveway, patio, or grass) with 2m clearance from flammable structures for our wood smoker and prep canopy.
Our pitmasters arrive 1.5 to 2 hours prior to your requested serving time to set up equipment, ignite wood coals, and bring all meats to serving temperature.
Choose between a live Pitmaster Carving Station (guests receive fresh-sliced brisket and roast directly), a self-serve buffet line, or individual pre-ordered boxed portions.

🍲 REHEATING LEFTOVERS THE NEXT DAY
Reheat in oven at 120°C (250°F) wrapped in foil with 2 tbsp butter or broth for 20 mins, or sous-vide at 65°C.
Reheat in air fryer or oven at 180°C (350°F) on a wire rack for 8-10 mins to restore 100% crispy crunch!
Stir in 2 tbsp milk or cream, cover with foil, and bake at 160°C (320°F) for 15 mins until cheesy & bubbly.
